You might automatically think that you need to only you fresh tomatoes here, but interestingly in school, we used nothing but canned (of course always sure that they were AVPN approved). That can be the easiest, but not to say you can’t use fresh too.
The following variations of fresh tomatoes can be used:
Canned Peeled tomatoes – the recommended tomato is the Pomodoro Pelato S. Marzano dell’Agro Sarnese-Nocerino D.O.P. and they should be broken up and mixed by hand. Peeled tomatoes that are genetically modified or altered to increase desired traits, resistance to herbicides, or increased crop render are not accepted.
The use of fresh or industrially prepared “Roma” tomatoes (Pomodoro lungo tipo Roma) is allowed. I have no problems finding canned DOP tomatoes in our local store; however, they do come with a hefty price tag – today going for around $4.25 for a 28oz can (which goes a long way).
